My Banana Cheesecake & Me
So there is a couple of things I can never say No to and cheesecake is one of them. I simply love cheesecake! Of course I have a healthy version for you here.
Have you ever tried the Banana Cream Cheesecake at Cheesecake Factory? It tastes awesome, right? But it is full fat – literally stuffed with butter and cream. The good news is that I came up with a recipe that tastes as good as the original and is made with only healthy ingredients! Seriously, I have never been as proud and eager to eat the dessert myself as with this cheesecake. You should definitely bake it for your next weekend.
These are the ingredients you need for the bottom:
2 cups oatmeal
1 cup shredded coconut
4 tablespoons peanut butter
1 teaspoon cinnamon
This is what you need for the filling:
600 gr diet labne (cream cheese)
1 cup diet Turkish yoghurt
3 big or 6 mini bananas
3 eggs
100 gr vanilla or banana protein powder
Preheat the oven at 190°C and spread the oatmeal and shredded coconut on a baking sheet. Bake for 10 minutes until they turn slightly brown. Then put in a large bowl and stir in the peanut butter and cinnamon. Prepare a springform pan and oil it so that the cake won’t stick. Gently press down the crumbs, until you got a nice even layer at the bottom of the pan.
Cut the cream cheese into chunks and place in a bowl. Add the yoghurt, mashed bananas, eggs and protein powder. Mix on medium speed until smooth, soft and creamy.
Bake in the oven for 45-60 minutes. Chill the cake until you are ready to serve the cake. You may top it with fresh bananas. Enjoy!
