Chocolate Oatmeal Cookies
These cookies are the perfect snack for when your children are coming back home from school.
Those giant cookies are delicious and so easy to prepare. It literally took me half an hour only until I got them out of the oven. Noah was the first one to try them. “Mommy, they are really nice!” he said and asked for a second one. I have to say, I loved them too. They are soft and moist, but most importantly, they are very light because I didn’t use any butter or nuts. It’s basically only fruits with oatmeal and some dark chocolate chunks. When Yasmin came back home from her basketball training it was almost dinner time so I let her eat just one. But after dinner we ate all the remaining ones at once!
Most probably you don’t need to do any extra shopping since you may already have all the ingredients at home. Here is what I used for 10 pieces:
2 small apples
2 ripe bananas
2 eggs
1 cup oatmeal
2 tablespoons dark cocoa powder
2 tablespoons raisins
1/2 teaspoon cinnamon powder
40 grams dark chocolate
Preheat the oven at 200°C. Then peal the apples and grate them finely so you get apple puree. Mash the bananas and mix the fruits with the oatmeal, cocoa powder, raisins and cinnamon. Separate the egg whites from the yolks and beat the egg whites separately. Carefully fold the stiffened egg whites into the batter and make batches the size of two tablespoons on a nonstick baking sheet.
Place the tray in the middle of the oven and bake the cookies for about 15 minutes.
